Clarify single chain models in docs

• Package currently provides users with access to single chain specialist variants
• These are distinct models to the default which were specifically pre-trained only using one chain
• This might be confusing given that the revised preprint contains single chain studies, but there we just used the defautl model and applied it to single chain data
• This difference is now clarified in the documentation
