Update LinuxServer Bookstack from v24.10.2-ls177 to v24.10.3-ls183

I pulled in the latest changes from the main branch (not sure how GitHub will handle this, the only real diff is the one line of the version tag) and performed the same steps as in #11

• Update Image tag/target
• Deploy via GitHub Actions
• Navigate to https://devwiki.mesh.nycmesh.net/ and confirm things work. Also log in and go to the settings page to confirm the version of Bookstack that's running
• Remove the tweak that allows GitHub Actions deploys from my branch (should no longer be needed after this according to @james-otten )
