fix(product): wrong snapshot name and inexistent script

RESOLVES FRMW-2801

What
For some reason the name of the product module snapshot was wrong, which leads to wrongly generated new migrations. Also, some information was missing in the snapshot (such as the category metadata field).
In addition, this pr remove all non existing command from the scripts
