Update doc in order to specify an upper JDK limit. #828

Can we use a matrix table represented in the UG that lists the major and minor versions (no need for patch versions) for all not EOL Grails versions and includes the earliest and latest JDK versions that are supported for each of those?

Matrix table added in #876.

I did not add minor versions as there (to my knowledge) are no differences there in java compatibility.
Also - I only added JDK mininum version as that is probably what's most important. I don't know where to get information on latest JDK compatibility.
