feat(input_drivers): new input drivers for lvgl

Description

• Added encoder input driver for lvgl
• Added keyapd input driver for lvgl
• Updated touchpad input driver for lvgl to have interface to get underlying touch driver
• Updated docs
• Updated lvgl submodule to latest release/v8.3 branch

Motivation and Context

For better experience using the https://github.com/esp-cpp/esp-box-emu

How has this been tested?

Building and running over in esp-cpp/esp-box-emu#35
