Given .NET Core 2.1 is no longer supported since 2021 (https://dotnet.microsoft.com/en-us/platform/support/policy/dotnet-core), we want to get rid of the quickstarts for 2.1 as well.
This PR drops both 2.1 quickstarts.
Also adds necessary redirects.
