Updated code samples so they can be run by copy-pasting into PowerShell - changed to - #2640

The examples use the symbol which is ASCII character 2013. This is not the standard - (ASCII 203d) character used in code, and means the examples can't be copy-pasted into PowerShell.

This PR updates the invalid characters and replaces them with the correct - characters
