I noticed that the traffic coming from Dataflow is much larger than our other similar sized data streams, and it's due to a lack of compression on bulk requests to Elasticsearch.
Support was added in Beam apache/beam#31601, but since ElasticsearchIO is forked we need to do the same here.
Also added a template parameter to disable it if needed.
