Picnic Sweet Potato Salad

  • 3/4 cup = 1 serving
  • Serves: 13

Ingredients

  • 4 medium - peeled & cubed sweet potatoes cooked
  • 3 medium - peeled & chopped apples
  • 6 strips cooked and crumbled bacon
  • 1/4 cup chopped onion
  • 3 tablespoons minced - fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2/3 cup oil
  • 2 tablespoons red wine vinegar

Directions

Place sweet potatoes in a pot, cover with water. Bring to a boil. Reduce heat; cover and cook 10-15 min. or just until potatoes are tender. Drain. Transfer to a large bowl; cool to room temperature. Cut potatoes and apples into bite size pieces. Crumble bacon. Add apples, bacon, onion, parsley, salt, and pepper to the potatoes. In a small bowl whisk oil and vinegar; pour over salad and toss gently to coat. Chill until serving.
