Mostly as a joke, I was hoping to be able to use a Wii Balance Board as a joystick. I know this is possible with the WiiBalanceWalker project, but I can't use that if this wiimote emulator disables all other uses of bluetooth. Is there any known possible way that I can use the Balance Board as the Nunchuck joystick and have the WiimoteEmulator connected to my Wii at the same time?

Maybe the Balance Board can be used as a USB device with the help of an Arduino or something?

I wonder if it is possible to use 2 bluetooth dongles to run the custom bluez app on a specific device then normal bluez on another.

Maybe the Balance Board can be used as a USB device with the help of an Arduino or something?

Maybe you can connect the board to bluepad32 then communicate to the pc using usb serial then create an app that sends to the WiimoteEmulator's socket, or maybe even use the esp32 to send to the socket directly?
