Tests seems to show that coc-pairs needs Neovim >= 0.8.1
I have tested coc-pairs without success with:

Neovim 0.6.1
Neovim 0.7.0

Some other users report that it is not working with Neovim 0.5.1

Maybe the doc should mention it.
