The only possible way of writing -> to become → is in a list or after a task,

It's my custom to type → → for right arrow, ← ← for left arrow.

Once you type → it won't convert instantly to the → symbol, switch to Markdown mode then back to WYSIWYG mode to see the results properly rendered.
