chore(deps): bump node-jose and openid-client in /test/e2e/oauth2-client

Removes [node-jose](https://github.com/cisco/node-jose). It's no longer used after updating ancestor dependency [openid-client](https://github.com/panva/node-openid-client). These dependencies need to be updated together.


Removes `node-jose`

Updates `openid-client` from 2.5.0 to 5.6.1
