some parameters about eddy tracking

Im a freshman about eddy tracking, recently i use jfaghm/OceanEddies eddy tracking codes to track eddies in south china sea.
but i dont understand how these output parameters are calculated, could you help me ?
1、amplitude
2、 intensity
and how to calculated EKE?
and why outmost sla will change in an eddy ? such as in the beginning the outmost sla is 5 cm but during some period the outmost sla will be 2 cm or some cm
