Add the ability to override the field type depending on the value

Hello! The other day I had a need to parse dates in Json so that the field was not a String, but a target one. But unfortunately, I can only override the field type by its name or schema. It would be very useful to be able to do this depending on the value. If necessary, I can try to participate in the development of this feature.
