Add callback to SFTTrainer log end-of-epoch fine-tuning metrics to Comet ML

Hi team,
It would be really cool to add logging of fine-tuning metrics to comet ML experiment tracker.
SFTTrainer accepts a callbacks parameter we could probably use to accomplish this.
