It would be great to have a preview of the data being sent so that users know exactly what is being transmitted before it is sent.

How / where would that be displayed? Every time before it gets sent off, or as a code block in the README?

I wouldn't do it every time, but would add a link or button, in the plugin's configuration, to launch a modal with the site's actual data. It's not like Joomla needs yet another modal, but it allow for displaying more information in the future.
