Check what Python versions to run CI for #725

We now run 3.9 and 3.11, see

python-version: ['3.9', '3.11']

Before that, we tested on 3.8, 3.9, 3.10. Is there are reason we no longer test on 3.10? Shouldn't we at least run some CI on each Python version we say we support?
