Is there any way to set variables in sass when compiling the css? For example I'd like to set the $font-family variable to something else than the default?

Not at the moment, but it sounds like something that we could add, however we should keep in mind that material-tools doesn't compile the entire SCSS. It only compiles the core.css. The rest of the files are just being read and concatenated.
