What

Raise a PR (but don't merge it) running our GitHub action workflows on ubuntu 24 instead of ubuntu-latest and check if it creates any problems.

Why

GitHub will be updating ubuntu-latest to be ubuntu 24 on Dec 5th. Ahead of the change, best to check if things will still run OK so we have a little time to fix anything, if necessary.
