This can be needed to move your Dash to other MQTT server.

Currently, it's not possible as all the fields in the server settings are gray and if I create a new server, I can't pull up my existing Dashboard there (without manually re-creating).

This is the correct behaviour, dashes are saved within a single MQTT account, shared for all Smartphones using this account. There is no export/import feature for dashes.

I didn't find the export/import feature for dashes, where it is?

Sorry, no export feature.

So the problem still persists? I didn't get what do you mean "this is the correct behaviour".
If you think the behavior is correct, then there should be a way around. I didn't find that way.
