ESRI Catalogue converted into STAC Catalogue

Dear all,

At UNEP-WCMC, we are interested to build (automatically) a STAC Catalogue from our ESRI Catalogue (portal) where are registered many of our ESRI REST geowebservices (MapServer & ImageServer). Of course, we would like to avoid duplication of effort, so any automatic script that help us to convert regularly our ESRI Catalogue in a STAC compliant catalogue is very useful.

Also we would like to avoid to copy the COG Geotiff in a AWS S3 repository... but if we want to be Cloud Native Geospatial compliant, it seems that we will have to do so, because Mapserver and Imageserver are not COG compliant currently.

Do you have any draft documentation that you are able to share us?
