at the time of writing version 24.002.20893 was available and running brew upgrade --greedy and brew reinstall adobe-acrobat-pro -f -d -v did attempt to update to the new version but the dmg it downloaded contains the .pkg that has 24.002.20857. Adobe provides links to the release notes which contain the installer .dmg for the update

There are some cases where Adobe provide supplementary updates but not a full installer. We are unable to support these instances. I haven't looked into this in great detail today, but it could be a clue.
