Having researched this a bit more, might be better to just integrate openstenoproject/plover#1679 directly.

We could try the patch approach, but that could fail since the rc2 was releases last year and the main branch have diverged since: openstenoproject/plover@v4.0.0rc2...main

In the mean time, I've created the draft #4 that tries to add plover-uinput as plugin but I'm having issue with the build
