I believe I found the issue. It was in my setup.

Since I am not working at the office, I was connecting from a Linux machine (local) to a Linux workstation (remote) using freerdp, which apparently creates a virtual desktop, therefore not using the remote GPU. This causes Maya to not use the OpenGL libraries from the GPU (newer version) but instead use the CentOS 7 mesa ones (older version). Not only the VP2 and other issues (color management, etc) were happening but also the USD Crate (binary) format was causing Maya to crash.
