@rsignell Sorry for the late reply. I had some issues with my computer. I made a jupyter notebook demonstrating the work on this PR

I was able to run a slightly-modified version of the notebook using the latest xarray (2024.10.0) and fsspec/kerchunk#523 .

When I extracted some data values from the virtual dataset, however, they seem unlikely to be correct.

Could you please check the data values in the last cell?

@emfdavid found the problem! The loop was not indented correctly so only one file each day was getting processed. Here's a fixed version that works!
