It could be fun to observe and useful to reference. (that old JavaScript frameworks joke, anyone?)
I've actually no idea if empty mempool is something that ever happens — but it could happen in principle, right?

Does seem to happen!
Saw it today on mempool.space:
Several half-full blocks, 729555, 729559 — must mean that briefly, the mempool has been completely emptied, before new txs got broadcasted.
Which shows blockchain health, and that "days since mempool emptied" could be usefully informative 🎉
